Chicken, Preserved Lemon and Pea Tagliatelle
Who doesn't love peas? Served with pasta and lemon, we are surely back in Italy! To continue the series on preserved lemons, here's a recipe you can even make with the kids - simple, delicious and oh so Italian.
Serves 4
Ingredients
1/2 barbecued chicken
500g tagliatelle or fettucine
2/3 cup frozen peas
Juice of 1/2 lemon
1/2 cup extra virgin olive oil
1 garlic clove, finely grated
2 tablespoons Ali's Preserved Lemon, chopped
1/4 cup pine nuts, toasted
Chives, to serve
Grated parmesan, to serve
Method
Shred chicken meat, discarding the skin and bones.
Cook pasta in a pan of boiling salted water, adding the peas for the final 2 minutes.
Meanwhile, whisk lemon juice, oil and garlic together with salt and pepper in a bowl large enough to toss the pasta.
Drain the pasta and peas and add to the bowl, tossing until well combined.
Stir in chicken, preserved lemon and pine nuts.
Top with chopped chives and parmesan.
Optional: Serve with a glass of chardonnay for the adults, and Ali's Lemon Fresh with soda for the children - and those doing Dry July!
